Basic Healthy Chicken & Vegetable Stir-Fry & Sauce

- 500 gms of skinless, boneless cut into thin slices chicken breast
- 1 red bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 1 Medium Sized Onion, sliced
- 2 medium carrots, cut into thin strips
- 50 gms of snap peas
- 3 cloves of garlic, minced
- 1 tablespoon of sesame oil
- 1 tablespoon of olive oil
- salt and pepper to taste
For the Sauce:
- 3 tbls of soy sauce
- 1 tablespoon of cornstarch
- 1 tablespoon of honey
- 1 tablespoon of sesame seeds
- 1⁄2 Cup of chicken broth

Directions
Heat the olive oil in a large pan over medium-high heat.
Season the chicken slices with salt and pepper and add them to the pan. Cook until golden brown.
Transfer the chicken pieces to a plate and set them aside.
In the same pan, add the sesame oil followed by garlic and vegetables. Stir-fry them until they are tender-crisp.
While the vegetables are stir-frying, in a bowl mix soy sauce, honey, cornstarch, sesame seeds, and chicken broth to prepare the sauce.
Add the chicken slices back to the pan and pour the sauce over the top.
Stir well to combine and let it cook for a few more minutes until the sauce has thickened.
Season with additional salt and pepper if required.
