Baked Grilled Mediterranean Chicken Overnight Marinade

I just love this Mediterranean Chicken Marinade recipe. It's a staple in my home, especially during summer when it's grilling season. The exceptional blend of herbs, spices, and the tartness from the lemon and vinegar give the chicken a succulent, flavorful taste that I think will amaze you. As a tip, marinating the chicken overnight will infuse the meat with maximum flavor. It's perfect with rice, salad, or even on a pita with some tzatziki sauce.

1. Step

Start by preparing the chicken. If you're using chicken breasts, I recommend slicing them to an even thickness for uniform marinating and cooking.

In a bowl, combine the minced garlic, chopped onion, olive oil, red wine vinegar, lemon juice, dried oregano, dried rosemary, sea salt, black pepper, and chili flakes if you are using. Stir it well to ensure all the ingredients are mixed thoroughly.

Place your chicken in a zip lock bag or a non-reactive container. Pour your marinade over the chicken ensuring all pieces are well-coated. Seal the bag or cover the container.

Keep the chicken in the refrigerator for at least an hour, but for ultimate flavor, overnight marinating is best. Turn the bag occasionally to evenly distribute the marinade.

5. Step

Preheat your grill or oven when you're ready to cook. Remove the marinated chicken and let it come to room temperature for about 15 minutes before hitting the heat. This helps in achieving even cooking.

6. Step

Cook the chicken until it reaches a safe internal temperature. For chicken breasts, that's about 165°F (74°C).
