Authentic Mexican Chicken Tacos

Ingredients
- 1 chicken breast
- 6 Mexican tortillas
- 1 green bell pepper
- 1 onion
- 40 g sweet corn
- 50 g cooked beans
- 100 g grated cheese
- 1 tablespoon Extra Virgin Olive Oil
- 1 pinch salt
- ground black pepper
- Chopped coriander
- lime

Directions
Put a pan with plenty of water on the heat. Add a pinch of salt, pepper and the chicken breast. Cook for 15 minutes until tender.

Remove from the pan and leave to cool. Then, shred the breast.

Peel the onion and cut it into julienne strips. Wash the pepper and cut it into thin strips.

Put a dash of oil in a frying pan and add the onion, a pinch of salt and pepper. Stir and fry for a couple of minutes. Then, add the pepper and stir. Cook for a couple of minutes.

Add the corn, beans and shredded chicken. Stir and add the grated cheese. Cook for a couple of minutes and remove from heat.

Place another frying pan on the heat and heat the tortillas for about 30 seconds on each side to make it easier to fold them without breaking them. Place the warm tortillas on a plate covered with a cloth.

Divide the warm tortillas among the plates and top each with a bit of filling, sprinkle with chopped coriander, and drizzle with lime juice.
