Authentic Chinese Special Fried Rice
Special Fried Rice is a delicious and versatile Chinese dish that can be served as a main course or as a side dish. Made with a combination of flavorful ingredients, it is a perfect way to use leftover rice and create a satisfying meal in no time.
Ingredients
- 2 cups white rice
- 2 tbls vegetable oil
- 3 eggs, beaten
- 1 Cup cooked chicken, diced
- 1 Cup cooked shrimp, peeled and deveined
- 1⁄2 Cup frozen peas, thawed
- 1⁄2 Cup carrots, diced
- 1⁄2 Cup bell peppers, diced (any color)
- 3 tbls soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1⁄2 teaspoon sesame oil
- salt and pepper to taste
- Green onions for garnish

Directions
Heat one tablespoon of vegetable oil in a skillet or wok over medium-high heat.
Add the eggs to the skillet and scramble until they are fully cooked. Remove the scrambled eggs from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil and sauté the garlic for about a minute, or until fragrant.
Add chicken, shrimp, peas, carrots, and bell peppers to the skillet. Stir-fry the ingredients for about 3-4 minutes until they are slightly tender.
Push the ingredients to one side of the skillet and pour the sesame oil in. Quickly add the cold rice on top of the sesame oil and break clumps with a spatula.
Drizzle the soy sauce over the rice and toss together until coated and heated through.
Add the scrambled eggs back into the skillet and mix with the rice and vegetables.
Season with salt and pepper to taste. Stir-fry for an additional minute to ensure all ingredients are combined evenly.
Serve and garnish with chopped green onions if desired.
