Amazingly creamy cottage cheese and apricot cake
A fantastic combination of delicate cottage cheese and ripe sweet apricots in a light pastry. An amazingly tasty, very simple cake with seasonal fruit😍
Ingredients

- 500 g semi-coarse flour
- 250 g crystal sugar
- 4 pcs egg
- 150 g yoghurt
- 3 dl milk
- 100 g butter
- 15 g baking soda
- 1 pcs vanilla sugar
- 1⁄2 kl salt
Filling
- 1 kg soft curd cheese
- 250 g crystal sugar
- 1 package vanilla pudding
- 1 vanilla sugar
- 150 g white yogurt
- 800 g apricots

Directions
Beat the yolks, sugar, and vanilla sugar. Add yogurt and whisk well. Then, alternately mix in butter, milk, and flour combined with baking powder and salt. You will get a nice smooth dough, into which we gently fold in the whipped egg whites that we have also beaten in the meantime.
In the filling, mix cottage cheese, both sugars, yogurt, and vanilla pudding powder. Finally, slowly mix into the curd the apricots cut into smaller pieces.
Grease a 35x25cm baking pan with oil, sprinkle with flour and spread half of the dough on it. On the dough, carefully apply all the filling and cover with the remaining dough. Bake the cake in a preheated oven at 180°C for about 45 minutes. Let it cool down thoroughly after baking.
The cake is wonderfully tasty, soft, juicy, and creamy🙂 Cottage cheese and apricots are an amazing combination that few can resist. I highly recommend the cake, it's fantastic even the next day. I would say it's even better🙂 Enjoy your meal!
