Yummy Homemade Honey Dijon Mustard

Ingredients
- 1⁄2 Cup of yellow mustard seeds
- 1⁄2 Cup of water
- 1⁄4 Cup of Dijon Mustard
- 1⁄4 Cup of Apple Cider Vinegar
- 1⁄4 Cup of honey
- 2 tbls of brown sugar
- 0.125 teaspoon of salt

Begin by soaking your mustard seeds in water for up to 2 hours. This is a crucial step as it softens the seeds, making them easy to work with later on.
After they've softened, put the mustard seeds in a food processor or a high-powered blender to be ground into a paste-like consistency.
Now, pour the dijon mustard into your blender. From my past experiences, using a good quality dijon mustard here makes a world of difference.
Simply follow up the previous step with adding the apple cider vinegar, honey, and brown sugar. As for the honey, I've found that locally sourced honey can greatly enhance the flavor.
Top it off with a dash of salt to bring out all those complex flavors that we've introduced so far.
Blend all the ingredients until you get a smooth consistency. Don’t worry if it seems a bit runny, as it will thicken up when refrigerated.
Pour the honey dijon mustard into an airtight jar and let it sit in the refrigerator at least overnight before using. It's important to let the flavors meld together, trust me, your patience will be rewarded!
