Vegan Pumpkin Pasta

Dough
- 400 g spaghetti
Pumpkin sauce
- 1 pc Small pumpkin
- 2 tbsp olive oil
- 1 bunch Fresh tarragon
- 1 pinch salt
- 1 pinch Ground pepper

1. Step
Preheat the oven to 220°C
2. Step
Peel the pumpkin, cut it into cubes and place it on a baking tray. Drizzle with 2 tablespoons of olive oil, then season with salt and pepper, and bake for about 20-25 minutes.
3. Step
Cook the spaghetti in salty water according to the instructions on the package
4. Step
When the pumpkin has softened, blend it with the oil and tarragon
5. Step
Strain the pasta, then pour over the pumpkin sauce.
6. Step
Mix it well and you can serve it right away!
