Vegan lentil stew
This warming and nutritious vegan lentil stew has become an absolute favorite in our family! As with most soups and stews, it tastes even better the next day when all the flavors are well infused. But even when freshly prepared, it makes every soup lover's heart beat faster.
Ingredients
- 2 tbsp olive oil
- 1 diced onion
- 2 cut carrots
- 1 large Diced potato
- 2 crushed celery stalks
- 2 chopped cloves of garlic
- 1 TL cumin
- 1 TL smoked paprika powder
- 500 g Green lentils (soak beforehand if desired)
- 11⁄2 l vegetable stock cube
- 400 g Chopped tomatoes (tin)
- salt and pepper to taste
- Fresh parsley to garnish (optional)

Directions
To cook the vegan lentil stew recipe, heat the olive oil in a large pan. Add the onion, carrots, potatoes and celery and sauté for approx. 5-7 minutes until soft.
Add the garlic, cumin and paprika and fry for a further minute. Do not use cumin and paprika too sparingly, as these spices give the dish its particularly hearty flavor.
Add the lentils and stir well so that they are completely mixed with the vegetables and spices.
Add the vegetable stock and chopped tomatoes and bring to the boil. Then reduce the heat and simmer for about 30 minutes, or until the lentils are soft. Check regularly to make sure the lentils are soft and add more water if necessary.
Season the vegan lentil stew with salt and pepper to taste and garnish with fresh parsley if desired. This stew is particularly delicious when served with fresh bread.
