Valentine's recipe: heart-shaped pizza

- 130 g Manitoba flour
- 200 g self-rising flour
- 230 ml water
- 5 g salt
- 3 g fresh brewer s yeast

- 200 g tomato sauce
- 6 cherry tomatoes
- 125 g mozzarella
- oregano
- salt
- sugar
- extra virgin olive oil

Directions
Dissolve the yeast in a bit of water. Pour the two flours into a large bowl and mix them together. Then, add the dissolved yeast and water and mix.

Add the salt and work the dough with your hands until smooth and uniform. Cover the dough and let it rest for 10 minutes.

Make four folds by pinching one edge of the dough and bringing it towards the centre, pinching another and bringing it to the centre and so on 4 times. Then, give the dough a spherical shape by taking it with your fingers on the base and pulling it towards you, do it several times until you get a nice smooth sphere. Put the dough back into the bowl greased with oil, also grease the dough and cover it with a plate or cling film. Leave to rise until doubled in the oven turned off but with the light on. It will take about 3 hours.

Now that the dough has risen, turn the bowl upside down on a lightly floured surface and pour the dough down. Divide it in half and form two spheres to keep covered under a cloth and leave to rise for 30 minutes.

In the meantime prepare the sauce then put all the ingredients on the table, the mozzarella should be cut into slices and left to drain while the cherry tomatoes should be cut in half and seasoned with salt, oil and sugar.

After half an hour, grease two baking trays with oil, one for each loaf. Place the dough in the centre of the pan and spread it by pressing with your fingers from the centre outwards until you get the size of a flat pizza. Make a cut of about 5 cm from the edge towards the centre and shape with your hands a heart.

Roll out the two heart-shaped pizzas and season them with tomato sauce, salt, oregano, cherry tomatoes and a drizzle of extra virgin olive oil.

Bake the two pizzas in a preheated oven at 250°C for 10 minutes. At 5 minutes remove from heat and add the mozzarella cheese. Serve and enjoy!
