Traditional Tongue Ragout
Tongue ragout is a very traditional and delicate dish, consisting of cooked beef tongue in a creamy sauce. It is often served with mashed potatoes and vegetables.
Ingredients
- 1 Piece Beef tongue
- 2 l water
- 2 Piece Onions
- 2 Piece carrots
- 250 ml cream
- 2 Tablespoon flour
- 1 Teaspoon salt
- 1 Teaspoon pepper

Directions
To prepare the tongue ragout, first clean and rinse the tongue. Then put the tongue in a large pot and add water until the tongue is completely covered. Bring to a boil and let simmer for 2-3 hours.
While the tongue is cooking, peel the onions and carrots and cut them into small pieces.
When the tongue is soft, remove it from the pot and let it cool. Then remove the skin of the tongue and cut the tongue into thin slices.
Sauté the onions and carrots in a separate pot, then add the sliced tongue. Season with salt and pepper.
In a separate bowl, mix the flour with some cold water until there are no lumps left. Add this mixture to the pot with the other ingredients and stir well.
Finally, add the cream and stir everything well. Let the ragout simmer on low heat for 10 minutes.
The tongue ragout is ready to be served. Enjoy your meal!
