Steamed clams are a traditional dish from various types of cuisines. Here is a simple and delicious recipe that you can prepare in no time and enjoy on any occasion. The clams are cooked in steam to preserve all their flavor and their juice, which can be used in the preparation of a rich sauce. Accompany them with a good white wine and enjoy a sophisticated and full-flavored meal.
Ingredients
For the clams
- 1 Kilo clams
- 1 liter water
- 2 clove garlic
- 1 tablespoon salt
- 1 tablespoon Chopped fresh parsley
For the sauce
- 1 tablespoon olive oil
- 1 tooth chopped garlic
- 1 unit Chilli pepper
- 1 cup white wine

Directions
1. Wash the clams well under running water to remove the sand.
2. In a large saucepan, bring the water to a boil. Add the clams, chopped garlic, salt, and parsley. Let the clams steam for about 10 minutes, until they open.
3. While the clams are cooking, in a separate skillet, heat the olive oil. Add the garlic and chilli and sauté until the garlic is golden.
4. Add the white wine to the pan and let it reduce by half.
5. Once the clams are cooked, remove them from the pot. Add the broth that is left in the pot to the pan with the olive oil and wine. Stir and let it cook for a few minutes.
6. Add the clams to the pan and stir so that they are well coated in the sauce.
Serve the clams hot, sprinkled with a little more chopped fresh parsley.
