Simple Decadent Chocolate Truffles
Chocolate Truffles are bliss for any chocolate lover and they hold a special place in my recipe book.
Ingredients
- 8 ounces of bittersweet or semisweet chocolate, chopped
- 1⁄2 Cup of heavy cream
- 1 teaspoon of Vanilla Extract
- Cocoa powder for dusting
- Optional: Nuts, cookie crumbs or melted chocolate for coating

To begin the truffle making process, prepare a heatproof bowl and a saucepan. (Having a double boiler is advantageous but not necessary.)
Place the chopped chocolate in the heatproof bowl.
In the saucepan, bring the cream to a simmer over medium heat. Once it starts simmering, immediately remove from the heat and pour it over the chocolate in your prepared bowl. This step ensures the chocolate melts evenly and gives a smoother texture.
Let the chocolate and cream mixture sit for about 5 minutes to allow the chocolate to melt. Then, add the vanilla extract and gently stir the mixture until it's smooth. Try not to over-stir as it could result in air bubbles.
Allow the chocolate mixture to cool completely at room temperature. Once cooled, cover the bowl and refrigerate it for at least 3-4 hours, or overnight if possible. The mixture needs to become solid enough to shape, and rushing this process might result in truffles that are too soft.
Once the mixture is firm, use a melon baller or small ice cream scoop, or even a teaspoon, to scoop out portions of the truffle mixture and quickly and gently roll them into 1-inch balls.
Roll the balls of chocolate in your coating of choice, then leave them to set on a baking tray lined with parchment paper. These steps make the truffles look rustic and homemade.
Finally, keep the truffles in the refrigerator until they're set and ready to serve.
