Quick Homemade Vegetarian Veggie Sausage Rolls
Satiate your taste buds with these finger-lickingly scrumptious Veggie Sausage Rolls. Loaded with the goodness of colorful vegetables, these rolls are encased in a flaky and super crispy puff pastry. A healthier, vegetarian alternative to traditional sausage rolls, they are perfect for parties, picnics, or just as a snack anytime!
Ingredients
- 2 tbls olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, finely grated
- 1 zucchini, finely grated
- 1 red bell pepper, finely chopped
- 1 Cup of cooked lentils
- 1 tablespoon soy sauce
- 1 tablespoon tomato puree
- 1 teaspoon dried thyme
- 1 teaspoon Dried Rosemary
- salt and pepper to taste
- 2 letters of puff pastry
- 1 beaten egg, for glaze

Directions
Preheat the oven at 180 degrees and line a baking tray with baking paper.
Heat olive oil in a pan. Add the onion and garlic, and sauté until the onions become translucent.
Add the grated carrot, zucchini, and chopped bell pepper to the pan and cook until the vegetables soften, stirring occasionally.
Stir in the cooked lentils, soy sauce, tomato puree, and the herbs. Season with salt and pepper and cook for few more minutes.
Roll out the puff pastry sheets and divide them into equal halves.
Spread the vegetable mixture along the center of each piece of the pastry.
Brush some beaten egg on one edge of the pastry. Roll it over the veggie mixture and press to seal.
Cut each roll into desired sizes, usually 2-inch pieces. Place them on the lined baking tray.
Brush a layer of the egg on top of the rolls and bake for about 25-30 minutes or until golden and crisp.
Allow the rolls to cool slightly before serving, enjoy them hot, with a dip of your choice.
