Old-Fashioned Cream Filling Buns
Delicious, fluffy cream-filled buns are a classic treat everyone loves. Freshly baked sweet dough filled with smooth, cold cream - each bite is a delightful burst of sweet harmony. Perfect for an afternoon tea or evening dessert treat.
Ingredients
For the Buns:
- 500 g bread flour
- 7 g fast action yeast
- 50 g semolina sugar
- 1⁄2 teaspoon salt
- 250 ml milk
- 50 g unsalted butter
- 2 eggs
For the Cream Filling:
- 200 ml whipping cream
- 50 g powdered sugar
- 1 teaspoon vanilla extract

Directions
In a large mixing bowl, combine the bread flour, yeast, caster sugar, and salt.
Heat the milk in a saucepan until warm, not hot. Add butter to the milk and stir until it melts completely.
Create a well in the middle of the dry mixture and pour in the milk-butter mixture. Gradually mix in the dry ingredients until a dough is formed.
Crack the eggs into the dough mix and knead until it becomes elastic and smooth. This should take approximately 10 minutes by hand.
Place the dough in a greased bowl, cover and leave it to rise in a warm place for about 1 hour or until it doubles in size.
Once the dough has risen, punch out the air and divide it into 12 equal pieces. Shape each piece into a bun. Place the buns onto a baking tray lined with parchment paper, cover, and leave to rise for another 30 minutes.
Preheat your oven to 190°C (375F). Bake the buns for about 15-20 minutes or until they turn golden brown. Remove the buns from oven and let them cool completely.
In the meantime, whip the cream with powdered sugar and vanilla extract until it forms soft peaks. Once the buns are cooled, cut a slit in each and fill it with the whipped cream.
Dust the buns with powdered sugar before serving and enjoy!
