Mascarpone and Fruit Cake
This sweet mascarpone and fruit cake is a great choice for summer afternoons. It is light, refreshing and thanks to the fruit, full of vitamins. You can prepare it with any fruit that you have on hand, but it tastes best with strawberries or raspberries.
Ingredients
Body size 30x20cm:
- 4 pcs egg
- 4 tablespoon brown sugar
- 2 tablespoon oil
- 2 tablespoon water
- 20 g cocoa
- 80 g special fine flour
- 1⁄2 pcs baking powder
Cream:
- 500 g mascarpone
- 400 ml whipping cream
- 3 pcs vanilla sugar
Fruit filling:
- 500 g raspberries
Chocolate:
- 100 g chocolate
- 100 ml whipping cream

Directions
Whisk the egg whites until stiff.
Mix the yolks with sugar until frothy and add oil, water, cocoa. Stir together.
Then we add sifted flour with baking powder and gently mix in the beaten egg whites.
Bake in a baking paper lined form at 160°C for approximately 20 minutes.
In a bowl, whisk together mascarpone, cream and sugar. Spread the cream on the base.
We wash the raspberries and mash them with a fork, spread them over the cream all over the cake.
Melt the chocolate together with the whipped cream and heat it, then take it off the stove.
Mix and pour onto the pie.
For example, sprinkle the top with cocoa and garnish with fruit.
