How to make Simple Vegan Sushi Bowl
This Vegan Sushi Bowl is a delightful recipe that is both healthy and fulfilling, offering an explosion of flavors with each bite!
Ingredients
For the Bowl:
- 2 cups of sushi rice
- 1 ripe avocado
- 1 Cup of cucumber, thinly sliced
- 1 Cup of carrots, thinly sliced
- 1 Cup of edamame
- 4 Pieces of roasted nori (seaweed) sheets
- 2 tbls of sesame seeds
For the Dressing:
- 1 tablespoon of soy sauce or tamari for a gluten-free option
- 1 tablespoon of rice vinegar
- 1 tablespoon of maple syrup
- 1 teaspoon of toasted sesame oil

Prepare the sushi rice according to the instructions on its packet. Always remember that rinsing the sushi rice before cooking it helps to remove excess starches, a tip from my experience!
While the rice cooks, progress with the preparation of your vegetables. Keep the slices thin as it enhances the texture and the presentation of the bowl.
For the dressing, mix soy sauce, rice vinegar, maple syrup, and toasted sesame oil in a small bowl. Taste and adjust the seasoning according to your palette.
Once the sushi rice is cooked and cooled slightly, divide it amongst two bowls. Remember, the rice forms the base of your sushi bowl, so ensure you layer it relatively thicker than your toppings.
Arrange the avocado, cucumber, carrots, and edamame on top of the rice. Sprinkle toasted nori sheets and sesame seeds on top.
Finally, drizzle the dressing over the bowls. Toss the bowl right before eating to make sure you get all the lovely flavors in every mouthful.
