Carne Asada Marinade
- 1 chopped yellow onion
- 1 large head garlic
- 1 Cup Guajillo peppers puree
- 1⁄2 Cup orange juice
- 1⁄4 Cup achiote paste
- 1⁄4 Cup distilled White Vinegar
- 1⁄4 Cup adobo sauce
- 1⁄4 Cup Kosher salt
- 1 spoon dried oregano
- 1 spoon ground allspice
- 1 spoon ground cumin
- 1 spoon ground nutmeg
- 2 dried bay leaves
- 1 Cup rapeseed oil
Queso Blanco
- 1 shredded Asadero cheese
- 4 oz green chillies
- 1⁄4 Cup heavy cream
- 2 tablespoon chopped onion
- 2 spoon ground cumin
- 1⁄2 spoon salt
- 1 tablespoon adobo sauce
Guacamole
- 1 avocado
- 1 tablespoon diced tomatoes
- 1 tablespoon red onion
- 1⁄2 volume diced cilantro
- 1⁄2 fresh lime
- salt
- ground black pepper

Directions
To make the queso, put all ingredients in a double boiler and heat on medium. Cook until melted and well blended, stirring occasionally.

For the guacamole, mash onion, jalapenos and salt in the molcajete. Add the avocado and carefully mash. Add tomatoes and cilantro. Squeeze fresh lime juice over the mixture. Sprinkle with salt and pepper to taste. Fold them together gently. Add pomegranate Mix gently and serve immediately.

For the marinade, add 1 cup of guajillo pure in a blender. Add the garlic cloves, onion, orange juice, achiote paste, vinegar, adobo sauce and all the spices including the bay leaves. Blend until smooth. With the blender running, start adding the cup of canola oil until it emulsifies.

Place the steak in a bowl or ziplock bag and pour the marinade. Set aside overnight.

Preheat the grill to high heat, remove the steak from the marinade and place it on the grill. Cook for 4-6 minutes on each side for a medium-rare steak. Let it rest for 2 minutes.
