Directions
Finely chop the herbs with a knife. In a bowl, break 3 eggs, and salt to taste. Beat and add the chopped herbs and mix.

Put a non-stick frying pan on the heat and add a knob of butter. When the butter starts to brown, add the beaten egg.

Drag the egg from the outside inwards. This will help the egg to set evenly.
