Directions
Start by peeling and slicing the onions thinly. This will help them caramelize more quickly and evenly.
In a medium-sized pan, melt the butter over medium heat. Add the thinly sliced onions, salt, and pepper. Cook the onions for about 15 minutes, stirring occasionally. I've found that by reducing the heat if the onions start to stick to the pan really helps them caramelize without burning.
Once the onions are lightly caramelized, add the minced garlic to the pan. Continue to cook for another 5 to 10 minutes, or until the onions are a deep golden brown color. Then, set them aside to cool.
In a bowl, combine the sour cream, cream cheese, mayonnaise, and lemon juice. Remember to allow your cream cheese to soften at room temperature first, as this will make it easier to blend with the other ingredients.
Once the onion mixture has cooled, stir it into the cream cheese mixture until it is evenly distributed. I've found mixing ingredients in parts yields a smoother texture.
Add the chopped chives, and taste the dip. Depending on your preference, add salt and freshly ground black pepper to taste.
Refrigerate for at least 2 hours before serving. The waiting time ensures the flavors meld beautifully together. Don't skip this step! I found that the flavors deepen the longer they have time to sit.
Serve chilled with your choice of chips or vegetables.
