Fluffy Strawberry Cake
Fragrant and fluffy strawberry cake, fresh with lemon and full of strawberry flavour. The dough is kept moist by yogurt, and of course the strawberries provide the aroma. You can certainly use other seasonal fruits, personally I really like black or red currant and also gooseberries.

- 500 g strawberry
- 300 g semi-coarse flour
- 120 g crystal sugar
- 80 ml oil
- 200 g white yogurt
- 3 teaspoons lemon juice
- 3 egg
- 1 baking soda
- pinch of salt
To clean the baking sheet.

Directions
Put eggs, sugar, a pinch of salt into a bowl and whisk it into a foam for about 3-4’. Then add yogurt, oil, and lemon juice. Sift the flour together with the baking powder, add it to the liquid base and create a thicker dough.
Preheat the oven to 200 degrees, grease the cake tin with fat and sprinkle with breadcrumbs. Put half of the dough at the bottom of the tin, spread half of the strawberries cut in half on it, add the remaining dough and spread the remaining strawberries with the cut side down.
Put in a preheated oven and bake for approximately 45'. Towards the end of baking, if necessary, cover it so that the surface of the cake does not burn. The cake is ready when you stick a skewer into the middle of the dough and pull it out dry.
