Filipino Mashed Sweet Purple Yam Dessert
Purple Yam is a delicious and vibrant root vegetable commonly used in Filipino desserts. This recipe brings out the natural sweetness of the purple yam and combines it with coconut milk for a creamy and indulgent treat.

- 1 Cup water
- 1 Cup coconut
- 1⁄2 Cup sugar
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon vanilla extract
- Purple food coloring (optional)
- Shredded coconut, for garnish

Directions
Wash the purple yam and cut into small cubes.
In a pot, bring water to a boil and add the purple yam cubes. Cook until yam is soft, about 10-15 minutes.
Drain the water and transfer yam to a blender or food processor. Blend until smooth.
In a separate pot, combine coconut milk, sugar, salt, and vanilla extract. Cook over medium heat until the sugar dissolves.
Add blended purple yam to the coconut milk mixture and stir until fully incorporated.
Optional: if you want a more vibrant purple color, add a few drops of purple food coloring and mix well.
Continue cooking the mixture for another 5 minutes, constantly stirring.
Remove from heat and let cool for a few minutes.
Serve the purple yam dessert. Top with shredded coconut for added texture and flavor.
