Easy Summer Vegetable Pasta Recipe

Ingredients
- 8 oz spaghetti
- 2 tablespoon olive oil
- 1 small onion
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 Cup cherry tomatoes
- 1 can crushed tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 Cup heavy cream
- Garnish: grated Parmesan cheese and chopped parsley

Directions
Cook spaghetti according to package instructions until al dente, then drain and set aside.
In a skillet, heat oil. Add garlic and onion, and sauté until onion is translucent.
Add red bell pepper, yellow bell pepper, and zucchini and sauté for 5-7 minutes, or until vegetables are tender.
Add cherry tomatoes, crushed tomatoes, dried basil, dried oregano, salt, and black pepper. Stir and let it simmer.
Add cooked spaghetti and cream to the skillet. Toss to combine until the pasta is coated in the creamy tomato sauce.
Simmer another 5-7 minutes, or until the sauce has thickened.
Garnish with grated Parmesan cheese and chopped parsley.
