Easy Healthy Oatmeal Lactation Cookies

Ingredients
- 1 Cup unsalted butter, softened
- 1 Cup brown sugar, packed
- 1⁄2 Cup crystal sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups old-fashioned oats
- 2 tbls brewer's yeast
- 2 tbls ground flax seed
- 1 Cup chocolate chips (optional)
- 1⁄2 Cup chopped nuts (optional)

Directions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the butter, mixing until just combined.
Stir in oats, brewer's yeast, ground flaxseed and mix until evenly distributed through the dough.
If desired, add in the chocolate chips and chopped nuts.
Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet, keeping them apart.
Bake for 10 minutes, or until edges are golden brown.
Allow them to cool on the baking sheet for 5 minutes before transferring to wire rack to cool completely.
