Easy Fresh Pineapple Salad
One summer recipe that never fails to impress is this Pineapple Salad!
Ingredients
- 1 large pineapple, peeled and diced
- 1 Cup of diced cucumber
- 1 Cup of cherry tomatoes, halved
- 1 medium-sized red onion, thinly sliced
- 1⁄4 Cup of chopped fresh mint leaves
- 1⁄4 Cup of chopped fresh coriander leaves
- Juice of one large lime
- 1 tablespoon of honey
- Salt and pepper, to taste

Start with choosing a ripe pineapple. The way to know it's ripe is when it emits a sweet smell from the base and the skin yields slightly to pressure.
Peel and dice the pineapple into small pieces, making sure to avoid the hard core. This can be a slightly tricky step which you would master after a couple of tries.
Dice the cucumber and halve the cherry tomatoes. Thinly slice the red onion to ensure it mellows out after mixing with the other ingredients and doesn't overpower the salad.
Combine the pineapple, cucumber, cherry tomatoes, and red onion in a large salad bowl.
Chop the mint and coriander leaves. These herbs not only freshen up the salad but significantly elevate the flavor profile.
Add the chopped herbs to the salad bowl and gently toss the ingredients to mix well.
For the dressing, mix the juice of a lime with honey and season it with salt and pepper. Adjust the sweetness and tanginess as per your taste preference.
Drizzle the dressing over the salad and give it a quick but gentle toss just before serving. I'd personally recommend not dressing the salad in advance as it can make the salad soggy.
The salad can be served immediately or be refrigerated and served chilled, as per your preference. I often pair it with grilled chicken or fish for a wholesome summer meal.
