- 1 tablespoon oil
- 2 cloves garlic
- 1 chopped red onion
- 1 chopped bell pepper
- 2 chopped carrots
- 3⁄4 Cup sliced mushrooms
- 1 Cup chopped spinach
- 8 egg
- 1⁄2 Cup heavy cream
- 1 teaspoon dried oregano
- 2 tablespoon Chopped parsley
- 3 tablespoon mozzarella
- 50 g feta
- salt and pepper

1. Step
Preheat oven to 200 degrees Celsius. Heat oil in a pan. Add all vegetables except for spinach, season with salt and pepper, and cook till tender. Then add spinach, cook till it's wilted, and then set aside to cool.

Beat the eggs. Add heavy cream, oregano, salt, and pepper. Mix, and add the cooked vegetables.
3. Step
Pour into a greased baking pan. Sprinkle cheese on top, and garnish with mushroom and carrot slices. Bake for 30 minutes. Enjoy!
