Baked Cheesy Stuffed Jumbo Pasta Shells

Ingredients
- 24 jumbo pasta shells
- 15 ounce container of Ricotta cheese
- 2 cups shredded mozzarella cheese
- 1⁄2 Cup parmesan
- 1 large Egg
- 2 tbls Freshly Chopped Parsley
- salt and black pepper to taste
- 2 cups marinara sauce
- 2 cloves of garlic, minced
- 1 teaspoon olive oil

Directions
Preheat your oven to 375°F (190°C). Lightly oil a baking dish or coat with nonstick spray.
Cook the jumbo pasta shells according to the package instructions until they are al dente, then drain and rinse under cold water.
In a large bowl, combine the ricotta cheese, 1 1/2 cups of mozzarella cheese, parmesan cheese, egg, parsley, minced garlic, salt and pepper.
Spread the marinara sauce evenly on the bottom of the prepared baking dish.
Stuff each pasta shell with the cheese mixture and arrange them in the baking dish.
Drizzle the shells with olive oil, then sprinkle the remaining mozzarella cheese over the top.
Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden.
Allow to cool for 5 minutes before serving.
