Authentic Chinese Shandong Shantung Chicken
Shantung Chicken is a classic dish from Shandong province in China. It offers tender chicken coated with a sweet, sour, and mildly spicy sauce, which is backed up with a pleasing vinegar tang. Highly flavorful, yet balanced in taste, this dish is great for family dinners and weekend get-togethers.
Ingredients
For the Chicken:
- 1 whole chicken
- 1 teaspoon of salt (for rubbing the chicken)
- 1 scallion (cut into segments)
- 2 slices of ginger
For the Sauce:
- 3 tbls of light soy sauce
- 3 tbls of rice vinegar
- 3 tbls of sugar
- 3 cloves of garlic (finely chopped)
- 2 red chili peppers (finely chopped, optional)
- 1 teaspoon of sesame oil

Directions
Start off by cleaning the chicken thoroughly and rubbing it with salt all around. Let the chicken sit for 15 minutes.
Rinse your chicken under cold running water to get rid of excess salt.
Place the chicken in a pot with enough water to submerge it completely. Add slices of ginger and scallions.
Bring this to a boil and then simmer gently for 30-40 minutes, until the chicken is cooked.
Once done, let the chicken cool and then cut it into bite-size pieces.
In a separate bowl, combine all the ingredients for the sauce.
Stir until the sugar is dissolved.
Drizzle this sauce over the slice chicken just before serving.
If you want, you can garnish the chicken with chopped scallions or fresh coriander.
Serve this scrumptious Shantung Chicken warm with steamed rice.
