Spinach and feta triangles or Greek Spanakopita recipe

Ingredients
- 2 tablespoon olive oil
- 100 g fresh spinach leaves
- 1 tablespoon finely chopped chives
- 1⁄2 Cup sliced onion
- 1 teaspoon minced garlic
- 2 tablespoon chopped fresh dill
- 200 g crushed feta cheese
- 1 egg lightly beaten
- salt
- ground black pepper
- 2 letters pastry
- 3⁄4 Cup melted butter

Directions
Heat the olive oil in a frying pan over medium heat. Add the spinach to the pan. Cook for 4 minutes until is wilted. Take the spinach out of the pan and let cool. Squeeze out excess water. Coarsely chop the spinach.

Wipe the pan with a paper towel. Heat the remaining oil over medium heat. Then, add the onion and cook for 4 minutes. Add the green onion, garlic, and dill and cook for 30 seconds.

Put the onion mixture into a bowl along with the chopped spinach, feta cheese and egg. Season generously with salt and pepper. Stir until thoroughly combined.

Roll out the pastry on a flat surface. Brush the dough with melted butter. Add a second layer of dough over the first, then brush the second layer with butter. Then, cut the dough vertically into 3 strips.

Put 1 1/2 tsp of the filling on one end of the dough strip. Fold one corner of the filling dough to form a triangle.

Fold the strip of dough until you reach the end. Brush a little melted butter and put the triangle on the prepared baking tray. Repeat the process with the remaining dough and filling.

Place the triangles on the baking tray. Bake the Spanakopita Triangles as soon as they are formed. Bake in a preheated oven to 175 degrees for about 25 minutes.
