Simple Classic Healthy Lentil Burgers
Lentil Burgers are nutritious and vegetarian-friendly alternatives to traditional beef burgers. These are packed with zesty flavours, protein, and fiber, guaranteed to satisfy both vegetarian and meat-eaters alike. They're easy to prepare and customizable according to your preference.
Ingredients
- 1 Cup dry lentils
- 21⁄2 cups vegetable broth
- 1 small onion, finely chopped
- 1 large carrot, shredded
- 1 bell pepper, finely diced
- 2 cloves of garlic, minced
- 2 tbls olive oil
- 1 Cup rolled oats, processed into flour
- 1 tablespoon soy sauce
- salt and pepper to taste
- 4 whole grain buns
- Lettuce, tomato and your preferred burger toppings

Directions
Rinse lentils and place them in a pot together with the vegetable broth. Allow it to boil, then reduce the heat and let it simmer until the lentils are soft and the broth is absorbed. This should take about 20-25 minutes.
While the lentils are cooking, sauté the onion, bell pepper, carrot, and garlic in olive oil until they're soft and translucent.
Once the lentils are cooked, combine them with the sautéed veggies in a large bowl. Add the oat flour, soy sauce, and season it with salt and pepper. Mix the ingredients until they're evenly distributed.
Shape the mixture into patties. If the mixture is too wet, add more oat flour. If it's too dry, add a little water.
Cook the patties in a non-stick pan over medium heat for 5-7 minutes each side or until they're golden brown and crispy.
Serve them on whole grain buns with your preferred toppings.
