Oven Baked Herby Garlic Roasted Mushrooms
These oven roasted mushrooms are a simple yet flavorful side dish that are perfect for any dinner party or a family meal. The mushrooms are seasoned with garlic, thyme, and a splash of lemon juice for a robust flavor. Ingredients
- 2 Pounds of mixed mushrooms, cleaned
- 4 tbls of olive oil
- 5 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- salt and pepper to taste
- 1 tablespoon fresh lemon juice
- Fresh parsley, for garnishing

Preheat your oven to 400 degrees F (200 degrees C).
In a large bowl, combine the cleaned mushrooms, olive oil, minced garlic, thyme, and season with salt and pepper. Toss everything together until the mushrooms are well coated.
Spread the seasoned mushrooms out on a roasting pan in a single layer. Make sure to spread them out as mushrooms shrink while cooking.
Roast for 20-25 minutes, or until the mushrooms are cooked and browned. Stir a couple of times during roasting to ensure even cooking.
Once cooked, remove the pan from the oven. Sprinkle fresh lemon juice over the cooked mushrooms, toss lightly to combine.
Garnish the mushroom with fresh parsley before serving.
