How to make Basic Fresh Rice Risotto
This Italian delight, Rice Risotto, is rich, creamy, and an ultimate comfort food. It's ideal for a nice family dinner or friendly gatherings. The recipe caters to those who need gluten-free dishes but adds an extravagance that everyone can appreciate.
Ingredients
- 2 tbls of olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1⁄2 cups Arborio rice
- 1 Cup of white wine
- 4 cups chicken stock, warmed
- 1 Cup parmesan
- 2 tbls of butter
- salt and black pepper to taste
- 2 tbls fresh parsley, chopped

Directions
In a large pan, heat olive oil on medium heat.
Add onions to the pan and cook until they turn translucent.
Add garlic and Arborio rice to the pan, stir until the rice gets a little toasty.
Pour in the white wine and stir gently until it's fully absorbed by the rice.
Add warm chicken stock, 1 cup at a time, to the pan. Stir until the liquid almost fully absorbed before adding another cup. Carry on until all stock has been used and the rice is al dente.
Remove the pan from heat and mix in the grated Parmesan cheese and butter until they melt.
Season the risotto with salt and black pepper to taste.
Before serving, sprinkle fresh chopped parsley on top of the risotto.
