Healthy Halloween sweet pumpkin egg sandwich recipe
Bored with your regular sandwiches? Here is a healthy sandwich recipe made using milk bread, sweet pumpkin and eggs. It is a wonderful recipe to try in autumn with the new pumpkin harvest.
Ingredients
- 315 g sweet pumpkin
- 4 boiled eggs
- 4 milk bread
- tablespoon With
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1 tablespoon mayonnaise
- 1 teaspoon whole grain mustard
- 100 g baby spinach

Directions
Microwave the peeled pumpkin until soft and squash it into a thick puree when cooled.

Add honey to the pumpkin puree and set it aside.

Peel the hard-boiled eggs and mash them too. Then, add mayonnaise, salt, and black pepper to the egg crumble. Mix the egg crumble with a spoon to spread out the spice and flavourings.

Assemble two slices of milk bread on a flat surface. On one slice, spread whole grain mustard and apply the pumpkin puree. On the other bread slice, add the mashed egg.

Add baby spinach on top of the pumpkin puree bread slice and put the bread slice with mashed egg on top of it to form a sandwich.

Tightly wrap the sandwich in plastic wrap and let it sit for 5 minutes. Repeat the process with the other two slices of bread.
