Directions
Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the chopped onion, minced garlic, bell pepper, and diced carrot. Stir-fry until the onion becomes translucent and the vegetables are tender, for about 5 minutes.
Add the peas to the skillet along with the vegetables and cook for a couple of minutes until they are heated through.
Push the vegetables to one side of the skillet and pour the beaten eggs into the other half. Scramble the eggs, breaking them up into small pieces with a spatula as they cook.
Once the eggs are fully cooked, mix them with the vegetables.
Add the cold, cooked rice to the skillet or wok with the vegetable-egg mixture. Press down on the rice with your spatula to break up any large clumps.
Drizzle the soy sauce over the top of the rice, and gently fold it into the mixture until everything is well combined.
Season with salt and pepper to taste. Stir-fry the rice for a couple more minutes until it's heated through.
Sprinkle the chopped green onions on top of the rice just before serving for a bit of extra flavor and color.
