Authentic Korean Fried Rice Kimchi Bokkeumbap
Korean Fried Rice, also known as Kimchi Bokkeumbap, is a popular, simple and delicious comfort food from Korea. Fried rice is a creative and flexible dish, adjust ingredients as per preference. The recipe demonstrates a classic Korean style fried rice including kimchi and spam, and topped with a fried egg to serve.
Ingredients
- 3 cups Cooked Rice (preferably a day old)
- 1 Cup Kimchi (chopped)
- 0.3 Cup Kimchi juice
- 1 Cup Spam (diced into small pieces) or substitute for protein of choice
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1⁄2 Cup Green onions (chopped)
- 4 eggs
- Salt and black pepper, to taste

Directions
Heat the vegetable oil in a large pan over medium-high heat.
Add the Spam and cook until browned, about 3-4 minutes.
Add the onion and cook until softened, another 2-3 minutes.
Stir in the chopped kimchi and minced garlic, and cook for another 2 minutes until heated through.
Add in the cooked rice and kimchi juice. Mix all the ingredients well and stir fry the rice for several minutes until the rice grains are individually distinct and coated well.
Drizzle over the soy sauce and sesame oil, then add the chopped green onions, stir together until well incorporated.
In a separate pan, cook the eggs sunny-side-up with a little salt and pepper.
Serve the fried rice in bowls, each one topped with a fried egg.
Sprinkle some more chopped green onions on top for garnish if you like, and it's ready to serve.
